Couscous for Picnic

- Ingredients for 2 people:
- 120 gr of pre-cooked couscous grain
- 120 ml of chicken stock or vegetable stock
- ½ Pumpkin
- ½ Red pepper
- ½ Green pepper
- ½ Yellow pepper
- ½ Spring onion
- 1 Carrot
- 2 Spoons of butter
- ½ Spoon of curry powder
- Olive Oil Extra
- Toasted sesame
- Salt
- Pepper
Instructions
How to cook it
Prepare a small saucepan with the soup on medium heat until the moment of boiling arrives. On a bowl, put the couscous and the spoon of oil, mix it well until the couscous is impregnated with the oil.
Pour the hot soup over the couscous bowl and leave it some minutes in order to be hydrated. Once it is hydrated, add the butter to give it more creaminess.
Cut all legumes in small squares and fry them on a fry pan with some olive oil and salt-pepper. When the legumes are ready, add the curry, mix it, then you leave it boil one more minute and then you take it out of the heat.
Add the legumes to the couscous with the sesame and mix it well.
Put the couscous on Glass container from Iris and close it hermetically.
